HIGH WEST DISTILLERY

High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to a whiskey distillery in Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history.
High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage. What was once a small operation in downtown Park City has grown to be an internationally-recognized, award winning brand.

COCKTAILS

Cocktails are created at High West utilizing the experience of our entire bar team, allowing us the opportunity to continue to grow and educate our team. The cocktails are created during controlled sessions we call “Bar Lab”. Bar Lab is a process where our team can express their creativity and imagination and in turn receive constructive feedback on their cocktail. This collaborative exchange of feedback, creativity and encouragement are what drive the program forward each season.
Cocktails from Bar Lab are then presented anonymously to a tasting panel. This panel consists of diverse palettes in the High West hospitality family. Final menu decisions are made based on feedback from the panel, trends and meeting our goal of insuring there is something on the menu for everyone.
Every drink, spirit, wine or beer offered at High west is tasted blind with a panel. Blind tastings prevent bias’s being brought to the table and the products are purely picked on taste and balance. At High West we insist on only allowing the best products in any category to be offered to our guests.

High West SaloonThe Saloon: Our downtown Park City saloon is the first ski-in, ski-out gastro distillery in the continental US. Known for its unique charm as a historic landmark and one of Utah’s best apres-ski bars! Home to our original 250-gallon copper pot-still in a historic livery stable and garage. The Saloon is the heartbeat and the pulse of our hospitality brand. Welcoming up to 2000 visitors a day, we build a bridge between any guest and the story of High West. Gastro-distillery is the term we use to describe our cuisine. Bold, regional, and seasonal but embracing our spirits to ride along as components of dishes or masterfully paired cocktails and straight pours.

 

 

 

The Reflectory The Reflectory: The Refectory is our country comfort, family friendly restaurant and tasting outpost right next to our distillery. Uniquely offered here is the ability to curate your tasting experience from our core products to bottles only found in the High West vault! Stay for a whiskey tasting after your distillery tour, and enjoy western- inspired fare, delicious cocktails, and stunning views of the surrounding valleys. Home to our Supper Club dinners and Sunday Brunch. The Refectory is also our premiere event space, where we host special occasions, corporate events and weddings all summer long, frequently featured on Rocky Mountain Bride.

 

 

The Nelson CottageThe Nelson Cottage: The Nelson Cottage is our fine dining establishment located just two doors up from the Saloon in downtown Park City. Originally serving as a private event space, The Nelson Cottage later became the home of High West’s unique prix-fixe whiskey-paired dinner. The cottage is where visitors get to experience the marriage of High West food and beverage most intimately. The Menu changes weekly with the change in season and the pending the new concoctions the Distillery has worked up to pair.
